Summary
Reading Klaus Meyer’s book about the New Scandinavian Cuisine, I was inspired by the recipes of the inhabitants of the north, including eco-friendly products and berries, fruits, and vegetables. The dishes of the new Scandinavian cuisine are pretty nutritious, yet all the ingredients are balanced, and because of the various herbs, kinds of vinegar, and fresh organic products, the taste can be incredible. I decided to cook a Scandinavian cuisine dish that corresponds to the current season to understand how delicious food can be, consisting of seasonal gifts of nature.
Ingredients
- 500 gr Chicken
- 60 g Brown sugar or honey
- 4 tbsp Water
- 3 tbsp elderflower vinegar
- 1 Garlic clove
- 3 Rosemary sprigs
- 3 Thyme sprigs
- 15 Whole black peppercorns
- 1 tbsp Olive oil
- 1 piece Small onion or shallot
- to taste Coriander leaves
Preparation Instructions
- Cut chicken meat into small pieces.
- Grate garlic on a fine grater.
- Put sugar in a small cup, pour elderflower vinegar and water, add garlic, add black pepper.
- Stir the sauce until the sugar dissolves.
- Cut the onion into thin feathers. Cut the cilantro leaves arbitrarily.
- Heat olive oil in a frying pan and fry onion feathers on it for 2-3 minutes until soft.
- Add chicken pieces and cooked sauce to the pan.
- Over medium heat, stirring constantly, put out the chicken in the sauce until tender, about 10 minutes. Chicken pieces are slightly caramelized.
- Transfer the finished chicken meat to a platter, sprinkle with chopped coriander and pour the sauce remaining in the pan.
As a side dish, you can serve rice or noodles. The side dish is poured with chicken sauce.
