The kitchen is expected to be the cleanest premises in the restaurant because its cleanness impacts directly the quality of the food served. Restaurant personnel that have access to the kitchen should keep to certain rules, such as washing hands regularly or putting a cap when entering kitchen, for example. However, ensuring that restaurant kitchen is properly cleaned is especially important because if a cook has clean hands, but cooks the food in dirty utensils or on a dirty table, it is still completely unacceptable and should be reformed. There are several steps which should be followed daily, weekly, and monthly in order to keep restaurant kitchen clean and for it to correspond to all the sanitary requirements.

List of Daily Tasks (Step by Step)

Kitchen Floor

  1. Sweep the floor and remove all the debris from it
  2. Mop the floor with a special kitchen cleaner

Warning! Use only kitchen cleaners or degreasers for washing kitchen floor. Do NOT use dishwasher soap, bleach, laundry detergent, etc. Some of them contain animal fats which make the floor slippery. This increases trauma risks at the working place!

  1. Clean the fryers and stoves you have used during the day
  2. Make sure that all the used dishes are removed from the kitchen
  3. Wash the surfaces and treat them with special cleaners

Note: These items should be laundered every day irrespective of how often they have been used during the day

  • Clean hoods and ducts, as well as fan systems with special cleaners

If the steps discussed above are followed, it is possible to significantly improve the sanitary conditions of the kitchen in the restaurant. Following these steps properly (every day, week, and month) will allow the kitchen personnel save time and equipment they have at their disposal. Possible problem which may arise during the fulfillment of these tasks is lack of time for proper cleaning of the premises and utensils. To deal with this problem, additional personnel may be hired for cleaning the kitchen.
