Regarding the factors that drive the demand and supply of organic food, several factors are at play. Nevertheless, increasing consumer awareness of the health benefits of organic food and the rise of ethical consumerism play crucial roles. Analysis

When analyzing the organic food market and its expansion, it is essential to focus first on the macro level. Figure 1 illustrates the significant growth in worldwide sales of organic produce from 1999 to 2021, with a 770% increase from $15.2 billion in 1999 to $132.74 billion in 2021. Additionally, Figure 2 shows the extent to which organic industries are developed worldwide and the demand for organic produce, with the leading countries consuming such foods being the United States, countries of the European Union, China, and Canada. Above all, the U.S. consumes more organic food than any other country, driving demand.

At the micro level, several trends in organic food demand and supply have been observed over the last two decades. New organic private labels have increased by 49% since the 2008 recession, offering consumers a variety of alternatives at varying price points (Campisi, 2020). The organic industry in the United States had a successful year in 2019, with sales of organic products in the food and non-food sectors reaching a record $55.1 billion (Campisi, 2020). This represents a notable 5% increase from the previous year.

Likewise, sales of organic food increased by 4.6% to $50.1 billion (Campisi, 2020). As shown in Figure 3, the supply is also increasing to balance the demand. While in 2010, over 8,000 acres were used for organic farming, in 2022, the number increased to over 17,000, representing an approximate 112% increase. A slight predicament arose during the global pandemic, which affected both supply and demand. Organic retail sales in the United States climbed by an average of 8% per year, reaching $53 billion in 2020 (U.S. Department of Agriculture, 2023a).

Meanwhile, as shown in Figure 4, sales in 2021 totaled $52 billion, representing a 6 percent yearly decline when adjusted for inflation (U.S. Department of Agriculture, 2023a). However, when not adjusting for inflation, there was actually a slight increase (U.S. Department of Agriculture, 2023a). Therefore, the decrease in organic food sales in the U.S. in 2021 may be attributed to rising inflation. As a result, the demand can still be considered valid in terms of its nominal value.

Additional statistics to consider when interpreting the supply and demand dynamics of organic produce include trends in environmental awareness and healthy eating. For example, as shown in Table 1, the percentage of people in each group who consider environmental issues crucial is notable. For example, while over half of people aged 65 and older in the U.S. value environmental protection, almost 80% of younger adults aged 18 to 29 believe it should be a priority. The importance of this data lies in its emphasis on the population’s environmental consciousness, which can influence the dynamics of supply and demand for organic food.

Additionally, Table 2 provides complementary data to the analysis above. The Healthy Eating Index in the U.S. is a crucial metric that shows the trend in healthy food consumption. With the index increasing by 7.33 points from 2005 to 2020, this pattern can be interpreted as a driving force behind the dynamics of supply and demand.

When interpreting the data retrieved on supply and demand, as well as other metrics, it is evident that several factors are driving the growth of the organic food industry. The first factor is that the U.S. public is becoming increasingly health-conscious. People’s attitudes toward health issues and their willingness to take action to safeguard their health are revealed by their level of health consciousness, as shown in Table 2. Due to their higher vitamin content and lack of additives, many believe organic produce is healthier (Akter, 2023). Therefore, the overall increase in healthy food consumption is crucial for increasing demand.

Additionally, due to the COVID-19 pandemic, consumer spending shifted almost immediately from fast food and restaurants to grocery stores, with conventional essentials, pantries, and frozen goods selling at high rates. As households consumed three meals a day at home, purchasing patterns were altered, leading to increased supermarket deliveries, online grocery shopping, and the purchase of new goods (Organic Trade Association, 2020). As consumers select high-quality organic food to support and nourish their families, the demand for organic products has soared, according to Laura Batcha, CEO and Executive Director of the Organic Trade Association (Organic Trade Association, 2020). Consequently, eating organic foods is very popular because of people’s increased health consciousness.

Another factor contributing to the growth of organic food demand is its safety. Consuming organic products helps reduce the risks associated with eating foods that have undergone chemical processing. Safety concerns have been identified as a significant factor in people’s desire to purchase organic foods, as they are perceived as healthier (Akter, 2023).

In other words, individuals who are concerned about food safety are more inclined to choose organic products and place greater importance on local manufacturers. Moreover, those who purchase organic goods believe that their actions benefit not only their family but also the community and the environment (Akter, 2023). This sentiment can explain the increase in organic farming approaches and the growth of organic agricultural acres.

Lastly, the environment is also an essential contributing factor. Environmental consciousness is the degree to which a person is aware of and motivated to address environmental issues. Organic farming benefits the environment in various ways, including soil preservation, the health of agricultural ecosystems, and the protection of ground and surface water (Akter, 2023).

Environmental concerns significantly affect a buyer’s likelihood of purchasing a product. In other words, a buyer is more inclined to purchase eco-friendly goods the more concerned they are about the planet’s welfare. Overall, three factors can be seen as the leading driving forces of supply and demand for organic food.

Conclusion

Hence, the organic food sector has been steadily expanding due to supporting factors, including product safety, as well as health and environmental consciousness. The organic food industry is likely to continue expanding as consumers increase their demand for safe, environmentally friendly food options. The overall trend indicates that organic food is a profitable commodity for producers, as individuals’ growing environmental and health consciousness contributes to increased sales. While the global pandemic has disrupted supply chains, the consumption of organic food has not faced significant challenges and has been largely unaffected by inflation. Therefore, there is no need to focus on something else or modify the commodity.

If I were to produce organic food, I would expand the product lines, improve distribution networks, and invest in innovative marketing strategies to reach a broader consumer base. Nowadays, marketing strategies play a crucial role in attracting new customers, often involving social media platforms such as Twitter, Facebook, and Instagram. Overall, as the organic food industry grows, it is crucial to examine how individual factors influence demand and how supply adjusts to this increasing demand.
